Cream of peas and French beef meatballs with mint
豌豆奶油薄荷法國牛肉丸

  • 700g of ground beef 700克碎牛肉

  • 1 bunch of mint 1 束薄荷

  • 1/2 bunch of cilantro 1/2 束香菜

  • 600g frozen peas 600克冷凍豌豆

  • 10 cl of cream 10 毫升奶油

  • 50g ricotta 50克意大利乳清乾酪

  • 15 cl chicken broth 15 厘升雞湯

  • 4 tbsp. olive oil 4 湯匙橄欖油

  • Salt and pepper 鹽和胡椒

步驟

Step 1


Mix ground beef with salt, pepper and chopped mint. Form small balls.

Step 2


Heat 2 tbsp of olive oil in a casserole. Sear the frozen peas over high heat and cook for 5 minutes

Step 3


Add the chicken broth and bring to a boil. Add cream and ricotta. Cook for 5 minutes and blend in a blender

Step 4


Heat 2 tbsp of olive oil in a skillet. Gently brown the beef meatballs for a few minutes over moderate heat

Serve the cream of peas with the beef meatballs and the chopped coriander
