Spaghetti Carbonara with Beef & Broccoli
卡邦尼意粉配牛肉和西蘭花

  • 2 pieces of flank steak 2塊側腹牛排

  • 3 pinches of salt 3撮鹽

  • 3 turns of freshly ground pepper 3圈現磨胡椒粉

  • 3 pieces of egg yolks 3個蛋黃

  • 100 g of grated parmesan 100 克磨碎的巴

  • 200 g of Spaghetti 200 克意大利面


步驟

1.Meat:


Step 1


Cut the meat into matchstick shapes. In a hot skillet with a drizzle of olive oil, brown them for 2 minutes.

Step 2


Season with salt and pepper and set aside.

2.Toppings:


Step 1


Cook the pasta 1 minute less than the time indicated on the package for al dente cooking.

Step 2


Drain them, keeping the cooking water. Wash and cut the broccoli into florets.

Step 3


Cook them for 5 minutes in a large volume of salted boiling water.

Step 4


Drain them and keep a few bouquets for dressing.

Step 5


In the bowl of a mixer, put the broccoli, egg yolks and Parmesan, mix everything with a little pasta cooking water.

Step 6


In a salad bowl, mix the cooked pasta with the mixture.

3.Dressing:


Step 1


Form a dome of dough using tongs, place it on the plate.

Step 2


Lay the meat strips on top, sprinkle with the broccoli florets.

將肉條鋪在上面,撒上西蘭花。


Step 3


Grate parmesan on top, season with pepper and serve.

在上面撒上巴馬臣芝士,用胡椒粉調味,然後上桌。
