Hong Kong Ho Fun Soup with French Beef and Fresh Ginger
法國牛肉清新港式河粉

  • 300g French hanger steak 300克法國封門牛柳

  • 2L beef stock 牛肉湯

  • 2 Chinese chives 2條韭菜

  • 4 cm fresh ginger root 4釐米生薑根

  • 2 badians 2個八角

  • Coarse salt 粗鹽

  • Freshly ground pepper 現磨胡椒

  • 100 g bean sprouts 100克黃豆芽

  • 500 g flat rice noodles 一斤河粉

  • Some fresh mint leaves 幾片新鮮薄荷

  • Some fresh coriander leaves 幾片新鮮芫荽

  • Some Thai basil leaves 幾片金不換(泰國羅勒葉)

  • 2 limes 2瓣青檸檬

  • 1 green chili 1根小青椒


步驟

Step 1

Pour the French beef stock into a cooking pot.

將牛肉湯倒在雙耳煲中。


Step 2

Add the finely chopped Chinese chives and badians, and grate the ginger.

加入切碎的韭菜和八角,生薑研碎成末。


Step 3

Season with coarse salt and bring to a gentle boil, covered, over low heat.

加入粗鹽調味,蓋鍋蓋以文火煮沸。


Step 4

Cut the small green chili in half lengthwise, remove the seeds, and slice it into thin rounds.

沿長邊將小青椒對半切開,去籽並切成薄片。


Step 5

Finely chop the mint, coriander and Thai basil leaves.

切細薄荷葉、芫荽和金不換。


Step 6

Slice the hanger stick into thin strips and immerse them in the hot borth with bean sprouts.

將封門牛柳切成條狀,與黃豆芽一齊放入滾湯中。


Step 7

Season with pepper if needed.

視情況可加入胡椒佐味。


Step 8

Cook the rice noodles separately in a pot of salted boiling water for 3 to 5 minutes, depending on your desired doneness.

將河粉放入燒滾的鹽水鍋中,根據喜好口感烹煮三至五分鐘。


Step 9

Drain and set aside.

瀝乾,放在一邊。


Step 10

Distribute the noodles into bowls and pour the hot broth with beef and bean sprouts.

把河粉放在碗中,澆上熱湯、牛肉和黃豆芽。


Step 11

Sprinkle with fresh coriander leaves before serving this delicious Beef Ho Fun Soup.
