French Steak Tartare
韃靼法國牛肉

Steak Tartare 韃靼牛肉 :

  • 180g of Beef sirloin diced 180克牛胸肉碎

  • 1 pc. shallot 西式紅蔥頭

  • A few salt-packed anchovies 少許鹽漬鯷魚

  • 2 tsp. chopped capers 2茶匙酸豆/刺山柑

  • 2 tsp. Cognac AOC 2茶匙干邑白蘭地

  • 2 tsp. mustard 2茶匙黃芥末

  • 1 tsp fresh chives 1茶匙細香蔥

  • ¼ tsp. ground black pepper ¼ 茶匙胡椒粉

  • ¼ tsp. Tabasco ¼ 茶匙 Tabasco辣椒醬

  • 2 eggs 2隻蛋

  • A few salt 少許鹽

  • A few olive oil少許橄欖油


Salad沙律:

  • 1 leave Frisee salad 1份苦苣沙律

  • 2 Radishes 2 櫻桃蘿蔔


步驟

Step 1


Mix the beef, shallot, anchovies, capers, and chives. Add cognac, mustard, black pepper and Tabasco for seasoning.

混合牛胸肉碎, 西式紅蔥頭, 鹽漬鯷魚, 刺山柑和細香蔥。再加入干邑白蘭地, 黃芥末, 胡椒粉和Tabasco辣椒醬作調味。


Step 2


Place a 4-inch ring mold in the center of a plate.

將一個 4 英寸的圓形模具放在碟的中央。


Step 3


Spoon half of the tartare into the mold and create a small indentation in the tartare with the back of a spoon and lay an egg yolk in it.

將一半韃靼牛肉倒在圓形模內,然後用匙羹背面把牛肉壓出一個凹位。


Step 4


Lay an egg yolk in it。

把蛋黄放在牛肉的凹位上。


Step 5


Arrange the shaved radishes and frisee salad leaves all around the tartare and drizzle with the oil.

將切好的櫻桃蘿蔔和苦苣沙律放在韃靼牛肉周圍。


Step 6


Seasoned with a drizzle of olive oil and sprinkle with the salt on steak tartare before serving.

上桌前淋上少許少許橄欖油和鹽調味。
